A Fun Candy for St. Paddy's Day!


Here is a wonderful candy recipe using that old Irish staple...the potato. My sister-in-law Kathy makes this wonderful treat and is sharing her recipe...


Potato Candy

1 small potato, boiled and peeled.

A box of powdered sugar.

1 teaspoon of vanilla extract.

Creamy peanut butter.

Mash the boiled potato with a small amount of the powdered sugar and the vanilla extract, till well mixed then keep adding the sugar till you have a dough form.

Roll out on some waxed paper till about 1/4 inch thick, sprinkle a little powdered sugar on so it doesn’t stick to the rolling pin.

Spread a thin layer of peanut butter over the dough.

Using the waxed paper, start rolling (like a jelly roll).

Wrap the rolled dough in waxed paper and place it in the refrigerator till cold.

Cut into 1/2 inch slices and store in an airtight container in the fridge.
